Eating

Eating/Dining/Cooking with twins is HARD. Having meals delivered the first few months was life-saving. Then I went dairy free and couldn't eat anything we had frozen. Drive-thrus are easy with twins because you don't have to get out of the car BUT since I try to stick to a whole foods diet, most drive thrus are unacceptable. I also started back to work and spending an hour in the kitchen when I only have a short time with my babies is out of the question. The key to getting everything done, getting lots of sleep, and not feeling stressed out is organization.

So many people ask how our life is with twins. To be honest, the twins don't make it that much crazier than it was before! I am over-committed to everything so balancing my need to volunteer with my family life is what makes things crazy. I also had to miss out on ANYTHING so I try to do as much as possible with the twins.  Here is a little look into our daily lives.

My week starts on Sunday. We spend Sunday morning being lazy. We feed the twins their morning bottles in our bed and just hang out and snuggle until they are ready for their morning nap. On Sunday we catch up on laundry, tidy up the house, and prepare for the week ahead. I do all of my grocery shopping on Sunday. I usually menu plan while Jay is outside doing yardwork and the twins are asleep. I head to the store around 5:30 and enjoy an hour and a half of shopping by myself! I return home to cook Sunday dinner and we usually eat with my mom. After dinner I start prepping for the week. I like to make a big batch of soup to eat with my sandwich for lunches each day. Here are two of my favorite recipes, Chicken, White Bean, and Spinach Stew and Chicken and Vegetable Soup. They are both easy to make and use rotisserie chicken (which is on sale at the HT on Sundays). I also cook Oatmeal Applesauce pancakes on Sunday nights. I make enough to eat four mornings a week (I treat myself to Starbucks once a week). Last, since Monday is so crazy and I don't get home until 6 or 6:30, I prep my ingredients for a crock pot meal. With everything already chopped its easy to dump it in the crock pot on Monday mornings.

I've also started using MealBoard to help me plan out the week. Mealboard was little complicated at first but once I synced it with my computer I was able to import tons of recipes by pasting the link and Mealboard organized my weekly schedule and created a shopping list for me. Love this APP! Also- This app helps me from picking up mindless things at the grocery store. My bill for 5 dinners and all the fixings for my sandwiches + a huge case of Perrier was only $104. I think this is really good when you consider that we eat mainly whole, fresh foods.

Meals for the Week:

Monday- Crock Pot Chicken Cacciatore
Tuesday- Tuscan Pasta (Tip: I cut all my ingredients the night before when the twins go to bed so its easy to cook the following day)
Wednesday- Crock Pot Vegetable and Chickpea Curry
Thursday- Crock Pot Chicken Lettuce Wraps
Friday- Out to dinner or leftovers night
Saturday- Slow Cooker Taco Soup (perfect for chilly football watching weather!)
Sunday Night- Whatever is leftover or my mom decides to bring/make
