So for breakfast today I ate an egg white, bell pepper, ham, and fat-free cheese omelet. YUM. My omelet was accompanied by my first every Berry Green Smoothie, a new creation. Here's the (soft) recipe.
1/2 cup Almond Milk
1 cup Trader Joe's Green Plant Juice
1 1/2 cups Trader Joe's Frozen Berries (blue berries, strawberries, and raspberries)
1 large handful of spinach
Blend all ingredients together. Feel free to play around with the proportions. It was a greenish-maroon color (very appetizing) and delicious. It was the perfect sweetness and super healthy!
Snack today is celery and 1oz almond butter for a snack. Salad with grilled chicken for lunch. Cucumbers, carrots, and apples for munchies during the day, and blueberry greek yogurt with almonds for my afterschool snack.
Dinner will be weight watchers glazed salmon, roasted butternut squash (my friend Adri's blog, a great place for whole food healthy recipes), and salad.
Recipe for Salmon:
| 2 Tbsp honey | |
| 1 Tbsp fresh orange juice | |
| 1 Tbsp fresh lemon juice | |
| 1 Tbsp hoisin sauce | |
| 2 tsp Dijon mustard | |
| 1/4 tsp table salt | |
| 1/4 tsp black pepper | |
| 1 1/2 pound(s) salmon fillet(s), with or without skin, four 6-oz pieces | |
| 1 spray(s) cooking spray |
Instructions
- Preheat broiler.
- Combine first 7 ingredients, and stir well with a whisk.
- Place fillets on a broiler pan coated with cooking spray. Brush with honey mixture; cook 12 minutes or until fish flakes easily when tested with a fork, basting frequently with honey mixture. Yield: 4 servings (serving size: 1 fillet).
