I kept thinking that I would come up with a fun theme for today but decided to go with a peek into our week instead! This week totally revolves around my children and food.... Jay has also been out of town this week on a hunting trip and we are SOOO excited to see him this afternoon! He sent me this shot yesterday. Anyone know how to cook pheasant?
1) We went for a Dr's. visit to check on baby Shep. I can't beleive that I'm 27 weeks along. This pregnancy has flown by! My mom and I had to run an errand in Belmont so she went to the doctor's with me so that we could ride out there together. The kids were crazy at the doctor's office and I'm sure everything what thinking that I am CRAZY for having another. :)
My mom took the kids out to the lobby while I was checking out. I walked out of the doors to find this scene. I thought it was too cute the three of them just hanging out.
This girl may have enjoyed her first oreo at dinner at the Dr. We went to Pike's and loved it as always!
2. If you follow me on Instagram (akscarroll), you saw this pic of Holden. I always lay out the kids clothes the night before and my mom gets them dressed in the morning after Jay and I leave for work. Holden has been such a pain to dress recently that by the time my mom realized he was in Emma Cate's shirt, she didn't have the energy to change him again! You can see how happy he was!
3. I said in a previous post that we recently re-joined the Y. Jay and I went to a cycling class together on Tuesday night and the kids went to childwatch. It was a fun little mid-week date with free babysitting AND we were burning calories! We got home around 6:15 and the babies were starving. I whipped this dish together in 5 minutes and it had all of the elements of a healthy, balanced meal. I heated up frozen organic brown rice, drained and rinsed organic black beans, half-way drained a can of organic tomatoes, mixed them all together with some shredded cheese and heated the mixture in the microwave for a minute. I then filled the bottom of a coffee cup with shredded cheese and then spooned in the rice mixture. I flipped them upsidedown to make a stack of rice and beans topped with cheese. I added some diced avocado to the top and voila! we had dinner! The kids actually ate it (we gave them some corn chips to go along) and I was so pleased to give them a healthy meal in 5 minutes. I am trying to find more 5 minute clean eating meals on pinterest but having a hard time so please let me know if you find anything!
4. No sugar added strawberry greek yogurt.
I still use our Beaba Babycook all the time. I have a vitamix mixer but find that it is often too wide to puree small batches of food. I put some organic strawberry's into my Babycook to make a nice puree. I added the pureed strawberries to some plain full-fat greek yogurt and bam, a really healthy strawberry yogurt for my babies. I recently started using these refillable pouches and I love that my kids can feed themselves yogurt and smoothies.
5. I had no idea my tiny little girl could produce so much throw up. I thought that Holden threw up earlier in the week because of a coughing spell but once Emma Cate started throwing up last night, I knew that they must have caught a bug. Luckily for me, when my kids are sick they are still super cheerful and active. You would hardly know they were sick. Emma Cate woke up crying at 1:30 and I went to check on her (anyone else feel like they have super ears when their hubbies are out of town? I feel like I can't get a good sleep at all!). She had thrown up in her crib. I got her out and started to clean her off (thank goodness for sleepsacks that keep messes off pjs!) and she was just smiling away. I changed the sheets, put her back to bad, and 5 minutes later, she did it again. I decided that she would sleep with me and covered the upper part of our best in a waterproof crib sheet, put two pillow cases on her daddy's pillow and let her sleep with that and covered her in a towel. She proceeded to get get sick every 30 minutes until 5am. She awoke this morning bright eyed and bushy-tailed. Her mama, not so much. I'm at work for a half-day and according to our sitter, she is nothing but chipper! I can't wait to get home though!

why not facetime daddy at 3:08am to let him join the party. Luckily, my husband is a great sport and told EC he hoped she felt better and told me he'd totally take over duties so I could relax/sleep on Friday afternoon.
FINALLY she's asleep and not throwing up... too bad my alarm had just gone off!

Shelby puked on Tuesday :(( I had to stay home. I didn't realize Jay was into bird hunting. My BIL and FIL are into that as well.
